Pumpkin Cake Roll

  1. 3 eggs (beat at high speed for 5 min.)
  2. 1 cup sugar (add gradually to eggs)
  3. Sift together…
    • 3/4 cup flour
    • 1 tsp baking powder
    • 2 tsp cinnamon
    • 1 tsp ginger
    • 1/2 tsp nutmeg
    • 1/2 tsp salt
  4. Then add to eggs/sugar.
  5. Fold in…
    • 2/3 cup pumpkin
    • 1 tsp lemon juice
  6. Spread into greased and floured 15x10x1 pan.
  7. Sprinkle with 1 cup chopped walnuts. Bake at 375° for 15 minutes.
  8. Turn out onto towel sprinkled with powder sugar.
  9. Start on narrow end and roll towel and cake together.
  10. Cool.
  11. Filling…
    • 1 8 oz pkg cream cheese
    • 1 cup powder sugar
    • 4 Tbl butter
    • 1 tsp vanilla
    • Beat until smooth.
  12. Unroll spread filling on cake. Then re-roll. Chill.

  13. Can be frozen.
