| Pumpkin Cake Roll |

- 3 eggs (beat at high speed for 5 min.)
- 1 cup sugar (add gradually to eggs)
- Sift together
- 3/4 cup flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
- Then add to eggs/sugar.
- Fold in
- 2/3 cup pumpkin
- 1 tsp lemon juice
- Spread into greased and floured 15x10x1 pan.
- Sprinkle with 1 cup chopped walnuts. Bake at 375° for 15 minutes.
- Turn out onto towel sprinkled with powder sugar.
- Start on narrow end and roll towel and cake together.
- Cool.
- Filling
- 1 8 oz pkg cream cheese
- 1 cup powder sugar
- 4 Tbl butter
- 1 tsp vanilla
- Beat until smooth.
- Unroll spread filling on cake. Then re-roll. Chill.
Can be frozen.
