Grilled Lime and Chile Chicken with Mango and Red Bell Pepper Salsa
  • 16 boneless, skinless chicken thighs
  • 1C peanut oil
  • 1/2 C fresh-squeezed lime juice (3 limes)
  • 2/3 C chile powder
  • 1 T garlic powder
  • 1 T onion powder
  • 1/4 C worcestershire sauce
  1. Mix the bottom 4 ingredients together and marinate the chicken for up to 24 hours. The longer the better.
  2. Grill.
Mango Salsa with Red Bell Pepper
  • 3 mangos, diced small
  • 1/2 large red bell pepper, diced small
  • 1/4 cup diced red onion, diced small
  • 2-3 T finely chopped cilantro
  • 4 T fresh lime juice (3 limes)
  • 4 T extra-virgin olive oil
  • 1/2 tsp. hot sauce
  1. Chop mango, red pepper, and red onion into pieces about 3/8 inch square, and combine in bowl.
  2. Mix lime juice, olive oil, ground cumin, green Tabasco and salt in small bowl, wisk together, and mix into salsa.
  3. Add chopped cilantro and stir until combined.
