| Grilled Lime and Chile Chicken with Mango and Red Bell Pepper Salsa |
- 16 boneless, skinless chicken thighs
- 1C peanut oil
- 1/2 C fresh-squeezed lime juice (3 limes)
- 2/3 C chile powder
- 1 T garlic powder
- 1 T onion powder
- 1/4 C worcestershire sauce
- Mix the bottom 4 ingredients together and marinate the chicken for up to 24 hours. The longer the better.
- Grill.
Mango Salsa with Red Bell Pepper
- 3 mangos, diced small
- 1/2 large red bell pepper, diced small
- 1/4 cup diced red onion, diced small
- 2-3 T finely chopped cilantro
- 4 T fresh lime juice (3 limes)
- 4 T extra-virgin olive oil
- 1/2 tsp. hot sauce
- Chop mango, red pepper, and red onion into pieces about 3/8 inch square, and combine in bowl.
- Mix lime juice, olive oil, ground cumin, green Tabasco and salt in small bowl, wisk together, and mix into salsa.
- Add chopped cilantro and stir until combined.
