Asparagus, Red Pepper and Potato Salad
  • 1 pound new red potatoes
  • 1 pound asparagus
  • 1/2 large red pepper, seeded
  • 1/2 cup red onion, slivered
  • 5 T spicy brown mustard
  • 6 T balsamic vinegar
  • 1-1/2 T brown sugar
  • 3/4 t kosher salt
  • 1/4 t black pepper
  • 1 t minced garlic
  • 6 T olive oil
  1. Cook potatoes and asparagus until tender, cube potatoes and cut asparagus and red peppers into inch and a half pieces. Place in bowl and add red onion.
  2. Mix the dressing together and continue mixing until creamy. Splash onto the vegetables and give a good stir, serve right away fo best color on asparagus.
