Asparagus, Red Pepper and Potato Salad
|
- 1 pound new red potatoes
- 1 pound asparagus
- 1/2 large red pepper, seeded
- 1/2 cup red onion, slivered
- 5 T spicy brown mustard
- 6 T balsamic vinegar
- 1-1/2 T brown sugar
- 3/4 t kosher salt
- 1/4 t black pepper
- 1 t minced garlic
- 6 T olive oil
- Cook potatoes and asparagus until tender, cube potatoes
and cut asparagus and red peppers into inch and a half
pieces. Place in bowl and add red onion.
- Mix the dressing together and continue mixing until
creamy. Splash onto the vegetables and give a good stir,
serve right away fo best color on asparagus.
