Atomic Buffalo Turds
you may adjust to your liking
  • 15-20 fresh jalapeños
  • 2 packages of thin sliced uncooked bacon
  • BBQ rub
  • toothpicks
Filling:
Combine all ingredients and keep at room temperature:
  • 2 8 oz packages cream cheese
  • 1 Cup of finely chopped smoked meat (pork, chicken, turkey work best or bacon)
  • 1/4 cup BBQ sauce
  • Salt & pepper to taste
  1. Cut the 'jap' in half lengthwise. Remove the seeds and the white membranes. The amount of the membrane will add to the level of 'heat' in the pepper.
  2. Stuff each half of the pepper with the cream cheese mixture and refrigerate; or put them in the freezer for half an hour. Doing so will make them easier to handle.
  3. Wrap each stuffed jap in bacon and secure with a toothpick.
  4. Sprinkle them with your favorite bbq rub
  5. Put them back in the fridge and take them out a half hour before you put them on the cooker.
