| Atomic Buffalo Turds |
you may adjust to your liking

- 15-20 fresh jalapeños
- 2 packages of thin sliced uncooked bacon
- BBQ rub
- toothpicks
Filling:
Combine all ingredients and keep at room temperature:
- 2 8 oz packages cream cheese
- 1 Cup of finely chopped smoked meat (pork, chicken, turkey work best or bacon)
- 1/4 cup BBQ sauce
- Salt & pepper to taste
- Cut the 'jap' in half lengthwise. Remove the seeds and the white membranes. The amount of the membrane will add to the level of 'heat' in the pepper.
- Stuff each half of the pepper with the cream cheese mixture and refrigerate; or put them in the freezer for half an hour. Doing so will make them easier to handle.
- Wrap each stuffed jap in bacon and secure with a toothpick.
- Sprinkle them with your favorite bbq rub
- Put them back in the fridge and take them out a half hour before you put them on the cooker.
